Hubbard to open restaurant at resort base

For Tim Hubbard, owning a fine-dining restaurant has always been the natural culmination of a career that started in the dish pit of an upscale establishment in upstate New York.

Since buying Rudi's Deli in downtown Winter Park a decade ago, the restaurateur has found success in the local casual dining scene, even opening another location in Englewood in 2011.

"It's been great," Hubbard said of working in Winter Park.

"It's been rewarding to be able to serve up great food to some great people from all around the country and all around the world in such a good location."

On Monday, Dec. 14, Hubbard will make the storied leap from casual to chic with the opening of his new restaurant, Vertical Bistro and Tap, in The Village at Winter Park Resort.

"It's an American bistro-style restaurant," Hubbard said. "That gives us a lot of latitude to put on the menu what we really like. A lot of the stuff is locally sourced."

Vertical's menu includes regional fare like Colorado-raised bison burgers and lamb chops.

True locavores will appreciate the bistro's elk chili; it's a locally sourced dish that comes by itself or on elk chili cheese fries, made with steak fries and Gouda.

For après appetites, Vertical serves Ahi tacos with Asian pineapple salsa, sliders, house-ground meatballs and pork bellies.

Hubbard is especially excited about the restaurant's charcuterie program, which offers a number of cured meats and cheeses by the ounce.

"It's going to be a very fun option for folks for après ski," Hubbard said.

Of course, no après option is complete without a strong lineup of libations, and as its name implies, Vertical excels in its drink offerings.

"We've got 14 taps, and we're certainly carrying all the stuff our guests here would want," Hubbard said.

Including bottles, Vertical carries upwards of 30 beers including a range of IPAs and other ales.

Hubbard has even included some Belgian labels like Chimay in honor of the site's former tenant, The Cheeky Monk.

Vertical also has a robust cellar offering a solid spectrum of wines.

Hubbard said he's excited to get started on his fine-dining foray.

"The quality of the food and the service I think is what I really enjoy – having something to put out that we are super proud of and that will hopefully exceed peoples expectations," Hubbard said.

Winter Park Resort is also looking forward to having Hubbard in The Village, said Winter Park Village Company and Commercial Asset Manager Kelly Mace.

"I've known Tim for quite some time and believe his knowledge of the area and the resort environment help make him a great fit for the Village at Winter Park," Mace said.

"Tim's existing restaurants in Winter Park and in Englewood already offer a great product, and have a great reputation. It's really exciting for me to see someone who's well known and well respected in the community expanding into the Village with our other strong partners."

Starting Dec. 14, Vertical Bistro and Tap will be open from 11 a.m. to 9 p.m. in The Village at Winter Park Resort.

Hours may be extended when business warrants.

Vertical is also available for private events.
