Chef Jean Claude Cavalera bids adieu to Grand County

After providing its patrons with gourmet French and American cooking for nearly twenty years, Caroline’s Cuisine will close its doors at the end of this month.

Owner Jean Claude Cavalera opened the eatery in 1991 after retiring from an illustrious career as the executive chef at establishments such as La Chaumiere in Washington, D.C., and the Loew’s Hotel in Monte Carlo. The restaurateur is renowned not only for his exquisite dishes, but also for the enduring friendship he sparked up with the iconic Julia Child during his tenure at the Boston Ritz-Carlton.

Cavalera has accepted a position as a consultant with Warwick Denver Hotel. “I wanted to turn the page and do something new,” said Cavalera. “I think Grand Lake is headed in a great direction with the new theater, but I look forward to the excitement a big hotel will offer.”



Caroline’s Cuisine will host a farewell dinner for Cavalera at 6 p.m. on May 29. The night will also function as a fundraiser for Grand County residents Mike Smith and Cathy Walton-Smith. Local band Tight Like That will provide live entertainment. Attendees are asked to make a minimum contribution of $10.
