New late-night taco spot opens in Grand Lake

Taco About It is Grand Lake’s newest Mexican restaurant, and it’s serving Michoacán style food from 7 a.m. to midnight seven days a week. The new business began serving food on Grand Lake’s main street in February.
Taco About It is located at 712 Grand Ave., outside Lone Eagle Lodge. Customers can bring their orders inside the lodge to eat in the lobby or take their tacos to go.
The owners of the new restaurant — Jose, Victor, Carlos and Miguel De Los Santos — are bothers, who also own Lone Eagle Lodge, which they bought in October 2023. The brothers learned about Grand Lake through a friend in real estate who presented them the opportunity to purchase the lodge. After seeing the area, the brothers immediately saw the potential of opening up a Mexican food restaurant.
Liz Garcia, who works as a manager for Taco About It, explained that the group decided to keep the food truck open late because of hungry hotel guests who would check in at the lodge at night. Guests would regularly ask if there are any late-night spots to grab a bite to eat, she said.
The brothers “noticed that every kitchen in town closed by 10 p.m., so they decided to keep the food truck open until midnight to fill that gap,” Garcia said.
Taco About It is serving up grilled chicken, al pastor, asada, birria and carnitas tacos. Quesabirrias, a tortilla filled with tender birria beef and melted cheese, is the restaurant’s specialty. Each taco ranges in price from $4 to $4.50.
When ordering birria tacos or a quesabirria, make sure to also order the birria consome, a rich, flavorful broth meant for dipping. Garcia recommends the quesabirria to anyone who isn’t sure what to get.
Customers can also order a Grand Dog, which is a bacon-wrapped hot dog topped with grilled onions, your choice of meat and guacamole for $9. The stand offers a 10% locals discount for anyone who has proof of living in Grand County.

Taco About It staff is working out of a food truck for now, but Garcia said the crew is working on acquiring permits to build an indoor restaurant space. The chefs have plans to add more menu items, including breakfast burritos, chilaquiles and other plates.

“Right now, we are focusing on tacos, but we plan to expand our menu very soon,” Garcia said. The brothers “are passionate about business. When they see an opportunity, they seize it.”
Garcia said the staff is excited about the planned future improvements, which include additional seating.
“We’re really excited about opening up the bar area and the dining area,” Garcia said.
