Carrie & Brian’s Tasty Wood Fired Pizza
Carrie Abeyta and Brian Roark of Grand Lake are the new owners of the former Mimi’z Pizza in Granby. The small, family-run restaurant is now called “Carrie and Brian’s Tasty Wood Fired Pizza,” continuing the old world traditional wood-fire oven pizza started by former managers Vickie and BJ Johnson. Carrie, a former employee of the Johnsons, has changed the menu but has kept Mimi’z favorites, she said. One change the family has made was lowering the prices of pizzas. “I want to be able to cater to the town, not the tourists,” Carrie said. They continue to offer and improve the salad bar, and have expanded the gameroom at the restaurant, which is located on the south side of Granby’s Main Street across from the Granby Chamber of Commerce. All three of the family’s children, ages 8 to 16, are helping out at the restaurant, Carrie said, and Brian is the “volunteer cook,” making the restaurant truly “family-run.”Roark and Abeyta have owned the restaurant since Dec. 23.
